- 2 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
Instructions
- Place chicken breasts in the slow cooker.
- Add white beans, corn, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-7 hours or high for 4 hours.
- Remove chicken and shred it with two forks.
- Return shredded chicken to the slow cooker.
- Stir in sour cream until well combined.
- Serve hot, topped with cheese if desired.

- This chili can be made a day ahead and reheated.
