Description

This slow cooker white chicken chili is a hearty and comforting dish. It combines tender chicken, creamy beans, and spices for a flavorful meal.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add white beans, corn, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-7 hours or high for 4 hours.
  5. Remove chicken and shred it with two forks.
  6. Return shredded chicken to the slow cooker.
  7. Stir in sour cream until well combined.
  8. Serve hot, topped with cheese if desired.
