Description

A comforting and creamy white lasagna soup packed with flavors.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 9 lasagna noodles, broken into pieces
  • 2 cups spinach, chopped
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic; sauté until softened.
  3. Add ground turkey and cook until browned.
  4. Pour in chicken broth and bring to a boil.
  5. Add heavy cream and broken lasagna noodles.
  6. Stir in spinach and Italian seasoning.
  7. Simmer for 20 minutes or until noodles are tender.
  8. Stir in ricotta and mozzarella cheese until melted.
  9. Season with salt and pepper to taste.
  10. Serve hot.

Notes

  • This soup can be made ahead and stored in the fridge.
  • Reheat gently on the stove.
  • Add more broth if it thickens too much.
