Ingredients

- 2 lbs chicken, cut into pieces
- 3 stalks lemongrass, minced
- 1 can coconut milk (400ml)
- 2 tablespoons curry powder
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Add minced lemongrass and chicken pieces. Cook until chicken is browned.
- Stir in curry powder and cook for 1 minute.
- Add coconut milk, fish sauce, and sugar. Bring to a simmer.
- Cover and cook for 30 minutes until chicken is tender.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
Notes
- Serve with steamed rice.
- Adjust the spice level by adding chili if desired.
- This dish can be made a day ahead for better flavor.
