  • 1 can coconut milk (400ml)
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add minced lemongrass and chicken pieces. Cook until chicken is browned.
  4. Stir in curry powder and cook for 1 minute.
  5. Add coconut milk, fish sauce, and sugar. Bring to a simmer.
  6. Cover and cook for 30 minutes until chicken is tender.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro before serving.
