Ingredients

- 2 lbs chicken thighs
- 2 stalks lemongrass, minced
- 4 cloves garlic, minced
- 1 onion, sliced
- 1/4 cup soy sauce
- 1/4 cup fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- 1 teaspoon black pepper
- 1/2 teaspoon chili flakes (optional)
Instructions
- Prepare the ingredients by mincing the lemongrass and garlic.
- In a bowl, mix soy sauce, fish sauce, brown sugar, vegetable oil, and black pepper.
- Place the chicken thighs in the crockpot.
- Add the minced lemongrass, garlic, and sliced onion on top of the chicken.
- Pour the sauce mixture over the chicken.
- If desired, add chili flakes for heat.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving and mix well with the sauce.
Notes
- Serve with steamed rice or noodles.
- Garnish with fresh cilantro or green onions.
- You can adjust the sweetness or saltiness to your taste.
