Description

A flavorful Vietnamese dish featuring chicken cooked with lemongrass in a crockpot.


Ingredients

  • 2 lbs chicken thighs
  • 2 stalks lemongrass, minced
  • 4 cloves garlic, minced
  • 1 onion, sliced
  • 1/4 cup soy sauce
  • 1/4 cup fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Prepare the ingredients by mincing the lemongrass and garlic.
  2. In a bowl, mix soy sauce, fish sauce, brown sugar, vegetable oil, and black pepper.
  3. Place the chicken thighs in the crockpot.
  4. Add the minced lemongrass, garlic, and sliced onion on top of the chicken.
  5. Pour the sauce mixture over the chicken.
  6. If desired, add chili flakes for heat.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Shred the chicken before serving and mix well with the sauce.
