A hearty and healthy vegetarian lentil soup recipe.
Ingredients

- 1 cup lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for another minute.
- Stir in lentils, diced tomatoes, vegetable broth, cumin, and thyme.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- This soup freezes well.
- Add more vegetables like spinach or kale for extra nutrition.
