Description
A hearty and warming spiced carrot and lentil soup.
Ingredients

- 2 cups carrots, chopped
- 1 cup lentils, rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and minced garlic; sauté until soft.
- Add chopped carrots, cumin, and coriander; cook for 5 minutes.
- Stir in rinsed lentils and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25 minutes or until lentils are tender.
- Blend soup until smooth, if desired.
- Season with salt and pepper to taste.
- Serve warm.

- Adjust spice levels according to your preference.
- Store leftovers in the fridge for up to 3 days.
