Ingredients

  • 2 cups carrots, chopped
  • 1 cup lentils, rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic; sauté until soft.
  3. Add chopped carrots, cumin, and coriander; cook for 5 minutes.
  4. Stir in rinsed lentils and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 25 minutes or until lentils are tender.
  6. Blend soup until smooth, if desired.
  7. Season with salt and pepper to taste.
  8. Serve warm.
