A savory focaccia made with sourdough discard, garlic, and parmesan.
Ingredients

- 2 cups sourdough discard
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet (2 1/4 teaspoons) instant yeast
- 1/4 cup olive oil
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 cup warm water
Instructions
- Combine sourdough discard, warm water, and sugar in a bowl.
- Add flour, salt, and yeast. Mix until a dough forms.
- Knead the dough on a floured surface for 5 minutes.
- Place the dough in an oiled bowl and cover for 1 hour.
- Preheat the oven to 425°F (220°C).
- Spread the dough on a greased baking sheet.
- Mix olive oil, garlic, and rosemary. Brush over the dough.
- Sprinkle parmesan cheese on top.
- Let it rise for another 30 minutes.
- Bake for 20-25 minutes until golden brown.
Notes
- Use fresh garlic for best flavor.
- Feel free to add other herbs.
