Description

A savory focaccia made with sourdough discard, garlic, and parmesan.


Ingredients

  • 2 cups sourdough discard
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1/4 cup olive oil
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 cup warm water

Instructions

  1. Combine sourdough discard, warm water, and sugar in a bowl.
  2. Add flour, salt, and yeast. Mix until a dough forms.
  3. Knead the dough on a floured surface for 5 minutes.
  4. Place the dough in an oiled bowl and cover for 1 hour.
  5. Preheat the oven to 425°F (220°C).
  6. Spread the dough on a greased baking sheet.
  7. Mix olive oil, garlic, and rosemary. Brush over the dough.
  8. Sprinkle parmesan cheese on top.
  9. Let it rise for another 30 minutes.
  10. Bake for 20-25 minutes until golden brown.
