A hearty and comforting slow cooker chicken gnocchi soup.
Ingredients

- 1 lb chicken breast
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 16 oz gnocchi
- 2 cups spinach
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add carrots, celery, onion, garlic, chicken broth, thyme, oregano, and bay leaf.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken, shred it, and return it to the slow cooker.
- Add gnocchi and spinach, and stir to combine.
- Cook for an additional 30 minutes on high.
- Stir in heavy cream and season with salt and pepper before serving.
Notes
- Use rotisserie chicken for a quicker option.
- Store leftovers in the refrigerator for up to 3 days.
- Freeze soup without cream for longer storage.
