Ingredients

  • 1 lb chicken breast
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 16 oz gnocchi
  • 2 cups spinach
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add carrots, celery, onion, garlic, chicken broth, thyme, oregano, and bay leaf.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Remove chicken, shred it, and return it to the slow cooker.
  5. Add gnocchi and spinach, and stir to combine.
  6. Cook for an additional 30 minutes on high.
  7. Stir in heavy cream and season with salt and pepper before serving.

Notes

  • Use rotisserie chicken for a quicker option.
  • Store leftovers in the refrigerator for up to 3 days.
  • Freeze soup without cream for longer storage.
