A simple and delicious side dish featuring roasted potatoes and asparagus topped with parmesan.

- 1 lb baby potatoes, halved
- 1 lb asparagus, trimmed
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated parmesan cheese
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine potatoes, olive oil, garlic powder, salt, and pepper. Toss to coat.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 20 minutes.
- Add asparagus to the baking sheet and toss with the potatoes.
- Continue roasting for another 15 minutes.
- Remove from oven and sprinkle with parmesan cheese.
- Return to the oven for an additional 5 minutes until cheese is melted.
Notes
- Adjust cooking time based on the size of the potatoes.
- Use fresh parmesan for better flavor.
- Serve immediately for best texture.
