Description

A simple and delicious side dish featuring roasted potatoes and asparagus topped with parmesan.


Ingredients

  • 1 lb baby potatoes, halved
  • 1 lb asparagus, trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine potatoes, olive oil, garlic powder, salt, and pepper. Toss to coat.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the oven for 20 minutes.
  5. Add asparagus to the baking sheet and toss with the potatoes.
  6. Continue roasting for another 15 minutes.
  7. Remove from oven and sprinkle with parmesan cheese.
  8. Return to the oven for an additional 5 minutes until cheese is melted.

Notes
