- 1 whole chicken (about 4–5 lbs)
- 4 medium potatoes, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 lemon, cut into wedges
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the potato wedges with olive oil, salt, pepper, garlic powder, and thyme.
- Place the chicken in a roasting pan and season with salt, pepper, and garlic powder.
- Stuff the chicken cavity with lemon wedges.
- Arrange the seasoned potatoes around the chicken in the roasting pan.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
- Serve the chicken with roasted potatoes and garnish with fresh herbs if desired.

- Use any type of potatoes you prefer.
- Leftovers can be stored in the refrigerator for up to 3 days.
