  • 4 medium potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 lemon, cut into wedges
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the potato wedges with olive oil, salt, pepper, garlic powder, and thyme.
  3. Place the chicken in a roasting pan and season with salt, pepper, and garlic powder.
  4. Stuff the chicken cavity with lemon wedges.
  5. Arrange the seasoned potatoes around the chicken in the roasting pan.
  6. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for 10 minutes before carving.
  8. Serve the chicken with roasted potatoes and garnish with fresh herbs if desired.
