Description
Delicious hamburger potato skins topped with cheese and green onions.
Ingredients

- 4 large russet potatoes
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt to taste
- Pepper to taste
- Olive oil for brushing
Instructions
- Preheat oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Rub potatoes with olive oil and sprinkle with salt.
- Bake potatoes for 45 minutes or until tender.
- While potatoes bake, cook ground beef in a skillet until browned. Season with salt and pepper.
- Remove potatoes from the oven and let cool slightly.
- Cut potatoes in half and scoop out some flesh to create skin boats.
- Fill each potato skin with ground beef and top with cheddar cheese.
- Bake for an additional 10-15 minutes until cheese is melted.
- Remove from oven and top with sour cream and green onions before serving.

- Feel free to add your favorite toppings.
- Store leftovers in the refrigerator.
