Description

Delicious hamburger potato skins topped with cheese and green onions.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt to taste
  • Pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Rub potatoes with olive oil and sprinkle with salt.
  4. Bake potatoes for 45 minutes or until tender.
  5. While potatoes bake, cook ground beef in a skillet until browned. Season with salt and pepper.
  6. Remove potatoes from the oven and let cool slightly.
  7. Cut potatoes in half and scoop out some flesh to create skin boats.
  8. Fill each potato skin with ground beef and top with cheddar cheese.
  9. Bake for an additional 10-15 minutes until cheese is melted.
  10. Remove from oven and top with sour cream and green onions before serving.
