A colorful and spicy treat, these rainbow cranberry jalapeno tartlets combine the sweetness of cranberries with a kick from jalapenos.
Ingredients

- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/4 cup jalapenos, diced
- 1 package of tartlet shells
- 1/2 cup cream cheese
- 1/4 cup chopped green onions
- 1 tablespoon lime juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine cranberries and sugar over medium heat. Stir until sugar dissolves and cranberries burst.
- Add diced jalapenos and lime juice to the cranberry mixture. Cook for an additional 5 minutes.
- In a bowl, mix cream cheese and green onions until smooth.
- Fill tartlet shells with cream cheese mixture.
- Top with cranberry-jalapeno mixture.
- Bake for 10 minutes until heated through.
- Cool before serving.
Notes
- Adjust jalapeno quantity for desired spice level.
- Can be made a day in advance.
- Store leftovers in the refrigerator.
