A delicious twist on traditional macarons with pumpkin pie flavor.
Ingredients

- 200g almond flour
- 200g powdered sugar
- 150g egg whites (about 5 eggs)
- 100g granulated sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 cup pumpkin puree
- 1/2 cup cream cheese
- 1/4 cup butter
- 1 cup powdered sugar (for filling)
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix almond flour and powdered sugar.
- In another bowl, whip egg whites until frothy.
- Gradually add granulated sugar and whip until stiff peaks form.
- Fold in the almond mixture and pumpkin pie spice.
- Pipe circles onto a baking sheet lined with parchment paper.
- Let them sit for 30 minutes to form a skin.
- Bake for 15-20 minutes.
- Let cool completely.
- For the filling, beat cream cheese, butter, pumpkin puree, and powdered sugar until smooth.
- Spread or pipe the filling onto half of the macaron shells and sandwich with the other half.
Notes
- Ensure egg whites are at room temperature.
- Use fresh pumpkin puree for best flavor.
- Store in an airtight container.
