Ingredients

  • 200g powdered sugar
  • 150g egg whites (about 5 eggs)
  • 100g granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix almond flour and powdered sugar.
  3. In another bowl, whip egg whites until frothy.
  4. Gradually add granulated sugar and whip until stiff peaks form.
  5. Fold in the almond mixture and pumpkin pie spice.
  6. Pipe circles onto a baking sheet lined with parchment paper.
  7. Let them sit for 30 minutes to form a skin.
  8. Bake for 15-20 minutes.
  9. Let cool completely.
  10. For the filling, beat cream cheese, butter, pumpkin puree, and powdered sugar until smooth.
  11. Spread or pipe the filling onto half of the macaron shells and sandwich with the other half.
