A delightful chicken pasta dish inspired by the Pioneer Woman.
Ingredients

- 8 oz penne pasta
- 2 tablespoons olive oil
- 1 lb chicken breast, diced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned.
- Add cherry tomatoes and spinach, cooking until spinach wilts.
- Stir in heavy cream and Parmesan cheese, mixing well.
- Add cooked pasta to the skillet and toss to combine.
- Season with salt and pepper.
- Serve warm.
Notes
- You can substitute the chicken with shrimp for a seafood version.
- Add garlic for more flavor.
