A quick and easy one pan tortellini and sausage skillet dinner.


Ingredients

  • 1 pound Italian sausage
  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Add garlic and cook for 1 minute.
  4. Stir in cherry tomatoes and Italian seasoning.
  5. Add tortellini and enough water to cover. Bring to a boil.
  6. Reduce heat and simmer until tortellini is cooked.
  7. Add spinach and stir until wilted.
  8. Season with salt and pepper. Serve hot.

Notes

  • Use any type of sausage you prefer.
  • Substitute vegetables based on your preference.
  • Can be topped with grated cheese before serving.
