- 2 boneless chicken breasts
- 8 ounces of penne pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper. Add to the skillet and cook until golden brown, about 5-7 minutes per side.
- Remove chicken from the skillet and slice into strips.
- In the same skillet, add garlic and cherry tomatoes. Sauté for 2-3 minutes.
- Add spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and sliced chicken to the skillet. Toss to combine.
- Garnish with fresh basil before serving.
