Description

Ingredients

  • 2 boneless chicken breasts
  • 8 ounces of penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt and pepper. Add to the skillet and cook until golden brown, about 5-7 minutes per side.
  4. Remove chicken from the skillet and slice into strips.
  5. In the same skillet, add garlic and cherry tomatoes. Sauté for 2-3 minutes.
  6. Add spinach and cook until wilted.
  7. Pour in heavy cream and bring to a simmer.
  8. Stir in Parmesan cheese until melted and smooth.
  9. Add cooked pasta and sliced chicken to the skillet. Toss to combine.
  10. Garnish with fresh basil before serving.
