- 8 oz cream cheese
- 1/2 cup sugar
- 1/2 cup sour cream
- 1/4 cup lemon juice
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1 cup fresh raspberries
- 1 tbsp sugar (for raspberries)
- 1 package of graham cracker crumbs
- 4 tbsp melted butter
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine cream cheese and sugar until smooth.
- Add sour cream, lemon juice, and vanilla extract. Mix until well combined.
- Fold in whipped cream gently.
- In another bowl, mash raspberries with 1 tbsp sugar.
- Prepare a muffin tin with liners and mix graham cracker crumbs with melted butter.
- Press the graham cracker mixture into the bottom of each liner.
- Spoon cheesecake mixture over the crust, filling each cup halfway.
- Add a spoonful of mashed raspberries on top and swirl with a toothpick.
- Bake for 15-20 minutes or until set. Let cool and refrigerate for at least 2 hours.
Notes
- Use fresh raspberries for best flavor.
- Can substitute lemon juice with lime juice.
- Top with extra whipped cream before serving.
