Description

Luscious lemon raspberry swirl cheesecake cups are a delightful dessert recipe that combines creamy cheesecake with tangy lemon and sweet raspberries.


Ingredients

  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 cup fresh raspberries
  • 1 tbsp sugar (for raspberries)
  • 1 package of graham cracker crumbs
  • 4 tbsp melted butter

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine cream cheese and sugar until smooth.
  3. Add sour cream, lemon juice, and vanilla extract. Mix until well combined.
  4. Fold in whipped cream gently.
  5. In another bowl, mash raspberries with 1 tbsp sugar.
  6. Prepare a muffin tin with liners and mix graham cracker crumbs with melted butter.
  7. Press the graham cracker mixture into the bottom of each liner.
  8. Spoon cheesecake mixture over the crust, filling each cup halfway.
  9. Add a spoonful of mashed raspberries on top and swirl with a toothpick.
  10. Bake for 15-20 minutes or until set. Let cool and refrigerate for at least 2 hours.

  • Can substitute lemon juice with lime juice.
