A creamy and cheesy loaded potato soup perfect for cold days.
Ingredients

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chives for garnish
Instructions
- In a large pot, combine potatoes, onion, garlic, and chicken broth.
- Bring to a boil and then reduce heat. Simmer until potatoes are tender.
- Use a potato masher to mash some of the potatoes for a thicker texture.
- Stir in heavy cream and cheese until melted.
- Add bacon and season with salt and pepper.
- Serve hot, garnished with chives.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth.
- You can add more cheese for extra creaminess.
