A creamy and cheesy loaded potato soup perfect for cold days.

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream

Instructions

  1. In a large pot, combine potatoes, onion, garlic, and chicken broth.
  2. Bring to a boil and then reduce heat. Simmer until potatoes are tender.

  4. Stir in heavy cream and cheese until melted.
  5. Add bacon and season with salt and pepper.
  6. Serve hot, garnished with chives.

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth.
