Ingredients

- 4 chicken thighs
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 medium potatoes, diced
- 1 lemon, juiced
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix garlic, olive oil, paprika, cumin, salt, and pepper.
- Coat the chicken thighs with the marinade and let sit for 30 minutes.
- Place the diced potatoes in a baking dish and drizzle with olive oil, salt, and pepper.
- Add the marinated chicken on top of the potatoes.
- Squeeze lemon juice over the chicken and potatoes.
- Bake for 45 minutes or until chicken is cooked and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- Serve with a side salad for a complete meal.
