Ingredients

  • 4 chicken thighs
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 medium potatoes, diced
  • 1 lemon, juiced
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix garlic, olive oil, paprika, cumin, salt, and pepper.
  3. Coat the chicken thighs with the marinade and let sit for 30 minutes.
  4. Place the diced potatoes in a baking dish and drizzle with olive oil, salt, and pepper.
  5. Add the marinated chicken on top of the potatoes.
  6. Squeeze lemon juice over the chicken and potatoes.
  7. Bake for 45 minutes or until chicken is cooked and potatoes are tender.
  8. Garnish with fresh parsley before serving.
