- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons curry powder

- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add chopped onion, garlic, and ginger. Sauté until golden.
- Add lamb and brown on all sides.
- Stir in curry powder, cumin, and coriander.
- Add diced tomatoes and coconut milk. Mix well.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
