Ingredients

- 2 tablespoons olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon red pepper flakes
- 2 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Soak the rice noodles in warm water for 20 minutes.
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add bell pepper and cherry tomatoes, cook for 5 minutes.
- Stir in red pepper flakes, soy sauce, and balsamic vinegar.
- Add the soaked noodles and toss to combine.
- Cook for another 3-5 minutes until heated through.
- Stir in fresh basil, salt, and pepper before serving.
Notes
- Adjust spice level by changing the amount of red pepper flakes.
- Use gluten-free soy sauce for a gluten-free option.
- Serve immediately for best texture.
