Description

Ingredients

  • 4 slices of Irish bacon
  • 1 medium onion, chopped
  • 3 medium potatoes, diced
  • 2 cups of chopped cabbage
  • 4 cups of chicken broth
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the bacon and cook until crispy. Remove and chop.
  3. Add onion and sauté until translucent.
  4. Add potatoes and cabbage, stirring for a few minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and let simmer for 20 minutes.
  7. Add cooked bacon back to the pot.
  8. Season with salt and pepper. Stir well.
  9. Serve hot, garnished with fresh parsley.
