Description
A hearty Irish bacon, cabbage, and potato soup that warms you up.
Ingredients

- 4 slices of Irish bacon
- 1 medium onion, chopped
- 3 medium potatoes, diced
- 2 cups of chopped cabbage
- 4 cups of chicken broth
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the bacon and cook until crispy. Remove and chop.
- Add onion and sauté until translucent.
- Add potatoes and cabbage, stirring for a few minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Add cooked bacon back to the pot.
- Season with salt and pepper. Stir well.
- Serve hot, garnished with fresh parsley.
Notes
- Use low-sodium broth for a healthier option.
- Feel free to add other vegetables like carrots or leeks.
- This soup can be stored in the fridge for up to 3 days.
