Hawaiian pineapple carrot muffins are a delicious treat that combines sweet pineapple with fresh carrots.

- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup crushed pineapple, drained
- 1 cup grated carrots
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flours, baking soda, baking powder, salt, and cinnamon.
- In another bowl, whisk the sugars, oil, and eggs until smooth.
- Add the crushed pineapple and grated carrots to the wet mixture.
- Combine the wet and dry ingredients until just mixed.
- Fold in the walnuts if using.
- Pour the batter into muffin cups.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- These muffins freeze well.
- Adjust sweetness by using more or less sugar.
