A delicious Hawaiian banana pineapple cake that combines the flavors of ripe bananas and sweet pineapple.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, cream butter and sugar until smooth.
  4. Add eggs and vanilla to the butter mixture and mix well.
  5. Stir in mashed bananas and crushed pineapple.
  6. Gradually add the flour mixture to the wet ingredients and mix until combined.
  7. Fold in walnuts if using.
  8. Pour the batter into a greased 9×13 inch baking pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let it cool before serving.

  • Store leftovers in an airtight container.
  • Can be served with whipped cream or frosting.
  • For a tropical twist, add coconut flakes.
