- 1 lb ground beef
- 1 onion, chopped
- 2 cups enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese
- 1 can black beans, drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef and onion over medium heat until browned.
- Stir in the cumin, chili powder, salt, and pepper.
- Add black beans and half of the enchilada sauce to the beef mixture.
- Spoon the beef mixture onto each tortilla and roll them up.
- Place the rolled tortillas seam side down in a baking dish.
- Pour the remaining enchilada sauce over the top.
- Sprinkle with cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- Serve with sour cream and guacamole.
- Use corn tortillas for a gluten-free option.
- Feel free to add vegetables to the filling.
