Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese
  • 1 can black beans, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef and onion over medium heat until browned.
  3. Stir in the cumin, chili powder, salt, and pepper.
  4. Add black beans and half of the enchilada sauce to the beef mixture.
  5. Spoon the beef mixture onto each tortilla and roll them up.
  6. Place the rolled tortillas seam side down in a baking dish.
  7. Pour the remaining enchilada sauce over the top.
  8. Sprinkle with cheese.
  9. Bake for 20-25 minutes until cheese is melted and bubbly.
