These Greek lemon style potatoes are flavorful and tender, perfect as a side dish.


Ingredients

  • 4 large potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt to taste
  • Pepper to taste
  • 1 cup vegetable broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
