Ingredients

- 2 cups of mixed vegetables (carrots, bell peppers, zucchini)
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop the vegetables into bite-sized pieces.
- In a large bowl, combine the vegetables, garlic, olive oil, oregano, thyme, salt, and pepper.
- Toss until the vegetables are evenly coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, stirring halfway through.
- Remove from the oven and serve warm.
Notes
- You can use any vegetables you prefer.
- Adjust the herbs to your taste.
- For extra flavor, add a splash of lemon juice before serving.
