Firecracker Chicken Meatballs with Pineapple Rice Bliss

Firecracker chicken meatballs served with cilantro coconut pineapple rice.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 can coconut milk (13.5 oz)
  • 1 cup jasmine rice
  • 1 cup pineapple, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix ground chicken, breadcrumbs, green onions, egg, soy sauce, ginger, garlic, and red pepper flakes.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake meatballs for 20 minutes or until cooked through.
  5. While meatballs bake, cook jasmine rice according to package instructions.
  6. In a saucepan, heat coconut milk and stir in cooked rice and pineapple.
  7. Mix in chopped cilantro before serving.
  8. Serve meatballs over rice mixture.

Notes

  • Adjust spice level by adding more or less red pepper flakes.
  • Use fresh pineapple for the best flavor.
  • Garnish with extra cilantro if desired.
