Description
Firecracker chicken meatballs served with cilantro coconut pineapple rice.
Ingredients

- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1 egg
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 1 tablespoon garlic, minced
- 1 teaspoon red pepper flakes
- 1 can coconut milk (13.5 oz)
- 1 cup jasmine rice
- 1 cup pineapple, diced
- 1/4 cup cilantro, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix ground chicken, breadcrumbs, green onions, egg, soy sauce, ginger, garlic, and red pepper flakes.
- Form mixture into meatballs and place on a baking sheet.
- Bake meatballs for 20 minutes or until cooked through.
- While meatballs bake, cook jasmine rice according to package instructions.
- In a saucepan, heat coconut milk and stir in cooked rice and pineapple.
- Mix in chopped cilantro before serving.
- Serve meatballs over rice mixture.
Notes
- Adjust spice level by adding more or less red pepper flakes.
- Use fresh pineapple for the best flavor.
- Garnish with extra cilantro if desired.
