Spicy jalapenos filled with fiery Cajun shrimp.

- 12 jalapenos
- 1 pound shrimp, peeled and deveined
- 1 cup cream cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Slice jalapenos in half and remove seeds.
- In a skillet, heat olive oil over medium heat.
- Add shrimp and Cajun seasoning, cook until shrimp are pink.
- In a bowl, mix cream cheese, cheddar cheese, and green onions.
- Add cooked shrimp to the cheese mixture and stir well.
- Stuff each jalapeno half with the shrimp mixture.
- Place stuffed jalapenos on a baking sheet.
- Bake for 20-25 minutes until jalapenos are tender.
Notes
- Wear gloves when handling jalapenos.
- Adjust Cajun seasoning to taste.
- For extra heat, leave some seeds in jalapenos.
