Ingredients

- 2 medium eggplants
- 1 cup ricotta cheese
- 1 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the eggplants lengthwise into thin strips.
- Brush the eggplant slices with olive oil and season with salt and pepper.
- Bake the eggplant slices for 15 minutes until soft.
- In a bowl, mix ricotta, mozzarella, Parmesan, garlic powder, and Italian seasoning.
- Spread the cheese mixture on each eggplant slice and roll them up.
- Place the roll-ups in a baking dish and cover with marinara sauce.
- Bake for an additional 20 minutes until heated through.
