Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves

Instructions

  1. Prepare the beef by cutting it into cubes.
  2. Add beef, carrots, potatoes, onion, and garlic to the crock pot.
  3. In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Pour the mixture over the beef and vegetables in the crock pot.
  5. Add bay leaves.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Remove bay leaves before serving.

Notes

  • Adjust seasoning to taste.
  • For thicker stew, mix 2 tablespoons of cornstarch with cold water and stir in during the last hour of cooking.
