A hearty and comforting crock pot beef stew recipe.
Ingredients

- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
Instructions
- Prepare the beef by cutting it into cubes.
- Add beef, carrots, potatoes, onion, and garlic to the crock pot.
- In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Pour the mixture over the beef and vegetables in the crock pot.
- Add bay leaves.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaves before serving.
Notes
- Adjust seasoning to taste.
- For thicker stew, mix 2 tablespoons of cornstarch with cold water and stir in during the last hour of cooking.
