A delicious twist on classic pasta salad with cowboy flavors.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine the pasta, cherry tomatoes, corn, black beans, bell pepper, red onion, and cilantro.
- In a separate bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve cold or at room temperature.
- This salad can be made a day ahead for better flavor.
