A delicious twist on classic pasta salad with cowboy flavors.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions.
  2. Drain and rinse the pasta under cold water.
  3. In a large bowl, combine the pasta, cherry tomatoes, corn, black beans, bell pepper, red onion, and cilantro.
  4. In a separate bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
