Ingredients

  • 4 cups diced potatoes
  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine diced potatoes and olive oil. Toss to coat.
  3. Add ranch seasoning, salt, and pepper. Mix well.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Bake for 25 minutes or until potatoes are tender.
  6. Remove from oven and stir in the smoked sausage.
  7. Top with shredded cheddar cheese and return to the oven.
  8. Bake for an additional 10 minutes until cheese is melted.
  9. Drizzle with sour cream before serving.
