Ingredients

  • 1 cup butternut squash puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix butternut squash, sugar, brown sugar, oil, eggs, and vanilla.
  3. In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into greased muffin tins.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
