Ingredients

  • 1 andouille sausage, sliced
  • 8 oz penne pasta
  • 1 bell pepper, chopped

  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup bourbon
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Parmesan cheese for serving

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced chicken and cook until browned.
  4. Add sliced andouille sausage, bell pepper, onion, and garlic. Cook until vegetables are tender.
  5. Stir in chicken broth, bourbon, and Cajun seasoning. Bring to a simmer.
  6. Reduce heat and stir in heavy cream. Cook until the sauce thickens.
