Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup BBQ sauce
  • 1 cup corn, drained
  • 1 avocado, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sweet potato cubes with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet.
  4. Bake for 25-30 minutes until tender.
  5. In a bowl, mix the shredded chicken with BBQ sauce.
  6. Once sweet potatoes are done, assemble the bowls.
