Ingredients

  • 1 cup jasmine rice
  • 1 block firm tofu, drained and pressed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 green onions, chopped
  • 1 teaspoon ginger, minced
  • 1 clove garlic, minced
  • Sesame seeds for garnish

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. Cut the tofu into cubes.
  3. In a bowl, mix soy sauce, sesame oil, ginger, and garlic.
  4. Heat vegetable oil in a pan over medium heat.
  5. Add tofu and cook until golden brown on all sides.
  6. Add mixed vegetables to the pan and stir-fry until tender.
  7. Pour the sauce over the tofu and vegetables, stirring to coat.
  8. Serve the tofu and vegetable mixture over rice.
  9. Garnish with green onions and sesame seeds.
