Crispy and flavorful Greek lemon potatoes made in an air fryer.
Ingredients

- 2 pounds baby potatoes
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Wash and cut the baby potatoes in half.
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the potatoes to the bowl and toss to coat.
- Preheat the air fryer to 400°F (200°C).
- Place the potatoes in the air fryer basket in a single layer.
- Cook for 20-25 minutes, shaking the basket halfway through.
- Once crispy, remove and garnish with fresh parsley.
Notes
- Adjust cooking time based on potato size.
- For extra flavor, add lemon zest to the mixture.
- Serve with a side of tzatziki for dipping.
