Description

Crispy and flavorful Greek lemon potatoes made in an air fryer.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Wash and cut the baby potatoes in half.
  2. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Add the potatoes to the bowl and toss to coat.
  4. Preheat the air fryer to 400°F (200°C).
  5. Place the potatoes in the air fryer basket in a single layer.
  6. Cook for 20-25 minutes, shaking the basket halfway through.
  7. Once crispy, remove and garnish with fresh parsley.

Notes

  • Adjust cooking time based on potato size.
  • For extra flavor, add lemon zest to the mixture.
