A fresh and tasty vegan crack pasta salad perfect for gatherings.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, black olives, and parsley.
- Add the cooled pasta to the vegetable mixture.
- In a separate bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and mix well.
- Chill in the fridge for at least 30 minutes before serving.

- Feel free to add your favorite veggies.
- This salad can be made a day in advance.
