A delicious Tuscan-inspired dish featuring creamy butter beans.
Ingredients

- 2 cups butter beans, cooked
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cherry tomatoes, oregano, salt, and pepper. Cook for 5 minutes.
- Stir in butter beans and cook until heated through.
- Add fresh spinach and cook until wilted.
- Sprinkle with Parmesan cheese before serving.
Notes
- For a vegan version, omit Parmesan cheese.
- Serve with crusty bread.
- Can be made ahead and reheated.
