Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 2 stalks lemongrass, smashed
  • 1 inch ginger, sliced
  • Fresh cilantro for garnish

Instructions

  1. In a pot, combine chicken broth, red curry paste, and lemongrass.
  2. Bring to a boil and add chicken, mushrooms, and bell peppers.
  3. Simmer until chicken is cooked through.
  4. Add coconut milk, fish sauce, and lime juice.
  5. Remove from heat and discard lemongrass.
  6. Garnish with fresh cilantro before serving.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • Serve with rice or noodles if desired.
