Ingredients

- 1 lb chicken breast, diced
- 4 cups chicken broth
- 1 can coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 cup mushrooms, sliced
- 1 cup bell peppers, sliced
- 2 stalks lemongrass, smashed
- 1 inch ginger, sliced
- Fresh cilantro for garnish
Instructions
- In a pot, combine chicken broth, red curry paste, and lemongrass.
- Bring to a boil and add chicken, mushrooms, and bell peppers.
- Simmer until chicken is cooked through.
- Add coconut milk, fish sauce, and lime juice.
- Remove from heat and discard lemongrass.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the spice level by adding more or less curry paste.
- Serve with rice or noodles if desired.
