Description
A hearty and flavorful Texas tamale pie with a cornbread topping.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 can kidney beans (15 oz), drained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 cup cornmeal
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon baking powder
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, brown the ground beef and onion until cooked.
- Add diced tomatoes, kidney beans, chili powder, and cumin to the skillet. Stir well.
- In a mixing bowl, combine cornmeal, milk, vegetable oil, egg, and baking powder.
- Spread the beef mixture in a baking dish.
- Pour the cornbread batter over the beef mixture.
- Bake for 25-30 minutes or until the cornbread is golden.
- Sprinkle cheddar cheese on top and bake for an additional 5 minutes.
Notes
- Serve with sour cream and chopped green onions.
- Can add jalapeños for extra spice.
- Store leftovers in the refrigerator for up to 3 days.
