A hearty and flavorful Texas tamale pie with a cornbread topping.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz), drained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 cup cornmeal
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon baking powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, brown the ground beef and onion until cooked.
  3. Add diced tomatoes, kidney beans, chili powder, and cumin to the skillet. Stir well.
  4. In a mixing bowl, combine cornmeal, milk, vegetable oil, egg, and baking powder.
  5. Spread the beef mixture in a baking dish.
  6. Pour the cornbread batter over the beef mixture.
  7. Bake for 25-30 minutes or until the cornbread is golden.
  8. Sprinkle cheddar cheese on top and bake for an additional 5 minutes.

Notes

  • Serve with sour cream and chopped green onions.
  • Can add jalapeños for extra spice.
