A tasty and easy sweet Hawaiian crockpot chicken recipe.
Ingredients

- 2 pounds chicken thighs
- 1 cup pineapple chunks
- 1 cup teriyaki sauce
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Place chicken thighs in the crockpot.
- Add pineapple, teriyaki sauce, bell pepper, onion, garlic, and ginger.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, remove chicken and shred it.
- Mix cornstarch and water in a small bowl, then stir into the crockpot.
- Cook on high for an additional 15 minutes to thicken the sauce.
- Return shredded chicken to the crockpot and mix well.
Notes
- Serve over rice or noodles.
- Can add vegetables like broccoli or carrots.
- Adjust sweetness by adding more or less pineapple.
