- 1 lb chicken breast, cubed
- 1 cup bell peppers, chopped
- 1 cup pineapple chunks
- 1/2 cup onion, chopped
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Add chicken cubes and cook until golden brown.
- Remove chicken and set aside.
- Add onion and bell peppers to the pan, sauté until soft.
- In a bowl, mix sugar, vinegar, soy sauce, and cornstarch.
- Pour the mixture into the pan and stir well.
- Add pineapple chunks and cooked chicken back to the pan.
- Cook for another 5 minutes until sauce thickens.
- Season with salt and pepper.
- Serve hot over rice.
Notes
- Adjust sweetness by adding more or less sugar.
- Substitute chicken with tofu for a vegetarian option.
- Serve with steamed vegetables for a healthier meal.
