A delicious strawberry crunch cheesecake with a crispy topping.
Ingredients

- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1 cup fresh strawberries, pureed
- 1 cup crushed freeze-dried strawberries
- ¼ cup powdered sugar
Instructions
- Preheat the oven to 325°F (163°C).
- Mix crushed graham crackers and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a mixer, beat cream cheese and granulated sugar until smooth.
- Add vanilla extract and mix well.
- In another bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- Stir in pureed strawberries until combined.
- Pour the cheesecake mixture over the crust.
- Bake for 50-60 minutes until set.
- Let cool, then refrigerate for at least 4 hours.
- Top with crushed freeze-dried strawberries and powdered sugar before serving.
Notes
- Use fresh strawberries for a better flavor.
- Chill the cheesecake overnight for best results.
- Store leftovers in the refrigerator.
