Description

Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1 cup fresh strawberries, pureed
  • 1 cup crushed freeze-dried strawberries
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix crushed graham crackers and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. In a mixer, beat cream cheese and granulated sugar until smooth.
  5. Add vanilla extract and mix well.
  6. In another bowl, whip heavy cream until stiff peaks form.
  7. Gently fold whipped cream into the cream cheese mixture.
  8. Stir in pureed strawberries until combined.
  9. Pour the cheesecake mixture over the crust.
  10. Bake for 50-60 minutes until set.
  11. Let cool, then refrigerate for at least 4 hours.
  12. Top with crushed freeze-dried strawberries and powdered sugar before serving.

Notes

  • Use fresh strawberries for a better flavor.
  • Chill the cheesecake overnight for best results.
