Description
A classic steakhouse potato salad featuring tender potatoes and a creamy dressing.
Ingredients

- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 cup celery, chopped
- 1/2 cup red onion, chopped
- 1/4 cup pickles, chopped
- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes until fork-tender, about 15 minutes.
- Drain and cool the potatoes.
- In a large bowl, mix mayonnaise and Dijon mustard.
- Add celery, red onion, pickles, and eggs to the bowl.
- Add cooled potatoes and mix gently.
- Season with salt and pepper.
- Chill for at least 1 hour before serving.
Notes
- Use Yukon gold potatoes for a creamier texture.
- Add bacon for extra flavor.
- Adjust seasoning to your preference.
