Ingredients
- Romaine lettuce – 1 head
- Cherry tomatoes – 1 cup
- Avocado – 1
- Red onion – 1/4
- Cilantro – 1/4 cup
- Black beans – 1 can
- Corn – 1 cup (fresh, frozen, or canned)
- Lime dressing – to taste
- Crispy tortilla strips – for topping
Instructions
- Rinse the romaine lettuce under cold water and chop it into bite-sized pieces. Place in a large salad bowl.
- Drain and rinse the black beans, then add them to the bowl with the romaine.
- Add the corn to the salad bowl.
- Halve the cherry tomatoes and add them to the bowl.
- Dice the avocado and add it to the salad.
- Thinly slice the red onion and sprinkle it over the top.
- Sprinkle chopped cilantro over the salad and gently toss to mix.
- Drizzle lime dressing over the salad and toss gently to coat.
- Top with crispy tortilla strips just before serving.
- Serve immediately and enjoy!
