Ingredients

  • Romaine lettuce – 1 head
  • Cherry tomatoes – 1 cup
  • Avocado – 1
  • Red onion – 1/4
  • Cilantro – 1/4 cup
  • Black beans – 1 can
  • Corn – 1 cup (fresh, frozen, or canned)
  • Lime dressing – to taste
  • Crispy tortilla strips – for topping

Instructions

  1. Rinse the romaine lettuce under cold water and chop it into bite-sized pieces. Place in a large salad bowl.
  2. Drain and rinse the black beans, then add them to the bowl with the romaine.
  3. Add the corn to the salad bowl.
  4. Halve the cherry tomatoes and add them to the bowl.
  5. Dice the avocado and add it to the salad.
  6. Thinly slice the red onion and sprinkle it over the top.
  7. Sprinkle chopped cilantro over the salad and gently toss to mix.
  8. Drizzle lime dressing over the salad and toss gently to coat.
  9. Top with crispy tortilla strips just before serving.
