Ingredients

- 1 cup grits
- 4 cups water
- 1 cup shredded cheddar cheese
- 1 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons butter
- 4 eggs
- 2 tablespoons olive oil
Instructions
- Bring water to a boil in a pot.
- Add grits and stir well.
- Reduce heat and cook for 20 minutes, stirring occasionally.
- Stir in cheddar cheese, cayenne pepper, butter, and salt.
- In a skillet, heat olive oil over medium heat.
- Fry eggs until the whites are set and yolks are cooked to your liking.
- Serve grits in bowls and top with fried eggs.
Notes
- Adjust the level of cayenne pepper to control spiciness.
- Use non-stick spray for frying eggs if needed.
- Grits can be made ahead and reheated.
