A hearty and flavorful southwest chicken casserole.
Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups tortilla chips, crushed
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, and onion powder.
- Layer half of the crushed tortilla chips in a baking dish.
- Spread half of the chicken mixture over the chips.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining chips, chicken mixture, and cheese.
- Bake for 25-30 minutes until heated through and cheese is melted.
- Let cool for a few minutes before serving.
Notes
- You can add bell peppers for extra flavor.
- This dish can be made ahead and refrigerated before baking.
- Use low-fat cheese for a lighter option.
