A hearty and flavorful southwest chicken casserole.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, and onion powder.
  3. Layer half of the crushed tortilla chips in a baking dish.
  4. Spread half of the chicken mixture over the chips.
  5. Sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining chips, chicken mixture, and cheese.
  7. Bake for 25-30 minutes until heated through and cheese is melted.
  8. Let cool for a few minutes before serving.

Notes

  • You can add bell peppers for extra flavor.
  • This dish can be made ahead and refrigerated before baking.
