- 4 medium cucumbers
- 1 teaspoon salt
- 2 tablespoons rice vinegar

- 1 garlic clove, minced

- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Wash the cucumbers and cut them into halves or quarters.
- Smash the cucumbers lightly with a rolling pin or a heavy object.
- Sprinkle salt over the smashed cucumbers and let them sit for 10 minutes.
- In a bowl, mix rice vinegar, soy sauce, sesame oil, minced garlic, and sugar.
- Rinse the cucumbers under cold water and drain well.
- Combine the cucumbers with the dressing, green onions, and sesame seeds.
- Toss to coat evenly and serve immediately.
Notes
- Adjust the salt to taste.
- For a spicier version, add red pepper flakes.
